Double Cheese & Bacon Egg Biscuits

I found this fantastic recipe here a month or so ago and decided to make them Easter weekend for us to try.

They were a big big hit!! I think the biscuits I used (cause its what was in my fridge) were too big, so I'll get the regular size next time.

Double Cheese & Bacon Egg Biscuits

Recipe:

4 large eggs

2 Tablespoons Milk

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup crumbled Feta cheese

1 can of refridgerated biscuits, 10 count

4-6 strips of Smithfield bacon, cooked & crumbled

1/4 cup shredded cheddar cheese

Instructions:

Preheat oven to 350 degrees F. Place eggs into mixing bowl and add milk, salt and pepper. Whisk to combine then stir in feta cheese. Press each biscuit round into 10 regular size muffin cups that have been sprayed with cooking spray. Bake for 6 minutes, remove from oven and with the end of a wooden spoon press centers of dough to make room for egg mixture. Pour in egg mixture into each partially baked biscuit, top evenly with crumbled bacon and shredded cheese. Bake for 12-15 minutes or until eggs are set. Remove and enjoy. 10 individual servings

Oh my. He was so little last year we weren't sure how he would do with costumed characters. This little boy just adored the bear you saw a picture of above, and the Easter bunny. He snuggled right up to it and smiled, and giggled. There were tears, however, when A's turn was over and he had to get down. He just simply didn't want to leave. I'm sure he would have sat there all day beside the Easter bunny. haha! :)

A also did very well on the egg hunt at church. He was sweet enough to pick up an egg and even stick it in someone else's basket! :) He got a few in his own little basket though, and had lots of fun with the eggs later at home (opening and closing, etc)

We saw the bear again before we left. A shot across the crowded room and right over to the bear. The bear was really nice, it even picked A up and lifted him up and down. A thought it was really fun. :)

Interesting Discovery

The other day A was playing with a pile of blocks on the floor by the window. I heard a noise and I looked up just in time to see him shoving 3 little blocks into the subwolfer speaker that sits beside our entertainment center. I was surprised to here all three blocks tumble down inside. Because really I know the front part is open, but I just assumed there was a screen or something at the back end of the "tunnel" to keep things out. When I went to the speaker and turned it upside down to try and get the toys out, I was surprised to hear a lot more clunking and rattling than what three toys would sound like.

I was only able to get a few blocks out. When my husband took a turn at shaking the speaker later, he got out a whole lot more. The picture I posted above shows the speaker and all of the blocks we got out of it. The only way I can think all of these got in here, is that A must have been secretly sticking things inside when we weren't looking.

Finger Painting

On a rainy day at the beginning of the month, I pulled out a little vanilla yogurt, divided it into 4 small bowls and added food coloring to make "paint". Aiden really enjoyed it, especially when he discovered how tasty it was. :)

Rice Crispie Treats

Ok, so for our wedding, we had a rice crispy treat cake. Different, yes, but my huband and I have never been big fans of cake. So we got creative. Now, every year on our anniversary we make rice crispy treats. What fun it will be now, with a little person to help us make them! :)

This is the process, step by step. So much fun!

First Trip to The Park

Well it warmed up for a couple days (60 degrees, wooowho!! haha) so we decided it was time to take A to the park for the first time (this year okay). Its a whole new discovery when they can walk by themselves (and climb). Everything is so interesting. Last summer, A enjoyed the swings, but this year is a lot more fun. We met friends at the park in the early afternoon, then went to a different park after naptime & dinner with Daddy. I can't wait for summer. :)

These two are so funny! They play just like real siblings. Don't worry they are always heavily supervised. Samson is so gentle with A, he's done so good. A is a little pest to the dog, however. We've stopped him from pulling too hard on Samson's ears or legs and even caught him starting to bite the dog a few times!

Florida (part 2) Random

first ice cream cone... he liked it for a few minutes, then decided it was too cold.

It's kinda hard to see here, but all the red blotches are little clusters of fire ant bites. Looked like tiny little blisters. Worst ever!! They swarm your feet if you step on or near their colony. Then they stick in your skin and keep stinging until you wipe them off. Continues to burn and itch for hours and days... Will def be paying more attention where I walk down there from now on. I got swarmed probably 4 times in one morning while on a field trip with my brothers! :(

Family game nights pretty much always include 'Rage' card game. So much fun! However, this set of cards had never happened before. We were unsure who won this round. haha

Skipjacks Sea Food is so yummy!! This is cheesy grits, fried and breaded gator, and sweet potato fries.

Aside from our popcorn addiction, canker sores in our mouths are also genetic in my family among the women it seems. My Gram (or Aunt, now I can't remember) found this wonderful natural supplement! You put a little drop of this liquid on the sore inside your mouth and it will help it heal and go away really soon. Mine was gone (or at least no longer bothersome) the day after I used one treatment of this.

My brother B is an aspiring pastry chef. He made us these delicious mousse puffs. Homemade chocolate mousse, homemade whipping cream all on toasted cresent roll dough. SO GOOD!

On the way home from Florida the flight was mostly empty. So they let me bring our carseat aboard instead of gate checking it with the stroller. I was very thankful not to have to hold the little guy on my lap for the 2.5hr flight. He slept the whole way and this Mom was able to relax, drink my complimentary juice and actually flip through a magazine!

Impressed? We got peanuts and pretzels too on the flight. FOR FREE! Yea- you need to book with Southwest next time. :) btw- these are really yummy!

So I had a babysitter for A, and the hubs knew we were going out to dinner. He was even encouraged to invite another couple to go out with us! So he was pretty surprised when we got to the restaurant and two more couples showed up. :) We had a fun evening together and am so grateful we have such good friends, who would take a few hours out of their weekend to spend it celebrating my husband's big 30th birthday!

My goodness, have I really not updated our blog since January? Here it is the middle of March & I am so far behind! My apologies!

Let's see... here's a brief summary with whats gone on in the past 2 and a 1/2 months since I gave an official update:
- Hubby started back to school to finish his Associates Degree (go! go! go!) :)
- I successfully surprised my hubby with a dinner out- complete with surprise guests for his 30th birthday
- A & I took a trip to Florida to spend some much needed time with my family
- A got 3 more teeth and officially made the complete switch from bottle to sippy cup (YAY!)
- Hubby & I got a dresser for our room - FINALLY
- We were under flood watches for all the rain we recieved
- We got 6 inches of snow in the middle of the flood watch
- The snow melted, it rained some more, and now its finally warming up outside!
- And we just got a 2nd car (yippeee!!)

Now I suppose you would like to see some pictures of all these events? Well you are in luck, because I'm still taking all kinds of pictures. ;) You know what else? I think I have some fun videos to share too... :)

We did a grilled cheese bar with assorted cheeses and white or wheat bread. I made a spicy chicken dip to eat with whole grain chips, made up some pigs in a blanket, there was a veggie "tray", jello, and pretzels to munch on.

yeah- i made the little water bottle covers with scap pieces of my scrabooking paper. the hubby even helped glue on the owl's funny faces.

I covered the kitchen table with brown paper, and covered a couple tall glass baby food jars with the extra owl covers I used on the water bottles and filled the jars with crayons. The older kids appreciated this party idea.

Don't you just love this? I came across the idea HERE on Brown Paper Packages (pretty much my favorite blog ever!) and then the ABC part on another blog post of hers. I kind of combined them. All you will need to make this project is:

Plastic Name Badge Holders

Scrapbook Paper

Keychain with strechy wristband OR Metal Binder ring

Scissors or paper cutter

Double sided tape

Color printer for small picture printer

Ribbon

I made one for Aiden's friend Logan for his 2nd Birthday. I also made one for Aiden. He will get it in his Christmas stocking... :) I think its a perfect little idea to help them with their ABCs and they see pictures of familiar things. I couldnt find the binder rings to hold the "pages" together so I grabbed the Keychain. I think this might actually work better. Now he can wear it on his wrist or we can clip it to his stroller or carseat so he can look at it on the go. The plastic pages are perfect for little kids- easy to wash off and you dont have to worry about them ripping the pages.

Homemade owls out of scrap fabric. Could do the buttons for eyes on all but I just did them on the big one. Would have needed to use smaller buttons on the little ones but don't trust my button sewing ability to not be a choking hazard in the end. :( These will be party favors and decorations. For the babies I stuffed a few with plastic sacks for crinkly sound. The older kids will get soundless stuffed owls.

Christmas Tree Lane & A New Toy

We went to a nearby town which has a lovely display lane of decorated Christmas trees. Christmas music is playing while you walk through and admire the scenes set up and decorated in different themes. Aiden enjoyed the moving stuffed animals and looking at all the pretty lights.

We've had to keep Samson's kennel in Aiden's room, since Samson needs to be confined when we leave the house. He is only ever in his cage when we are gone and we had no place else to keep it up. Aiden has decided its a fun play spot though. :)

Saturday Nov. 27, we had dinner with the Gudyk family. Here is a picture of Logan (2yr) and Aiden playing with Logan's new drum set. Logan loves "baby Aiden"! :)

On Thanksgiving Day we continued our Cracker Barrel tradition. Super yummy meal for all of us! This is Aiden's (dessert size) plate which he actually ate all of that plus some more pieces of bread.

A few weeks ago we took our family pictures. It is a bit tricky to take the photo and also be in them, but I think we got a few good ones :). I got a remote for my camera so there is no more pushing the timer button on the camera and running to get in the picture. It is a little more relaxed now.

9 Months

I can't believe A is already 9 Months old! So crazy that time flies by so quickly...We went to the park to get these pictures. Surprisingly enough he didn't attempt to put the leaves in his mouth for a taste test. As you can see he has really passed up that little giraffe. Hard to believe that 9 months ago that plush toy was bigger than he was! I love the expression on his face here, there are all sorts of imagined phrases when I wonder what he was thinking. :)

A is really crawling all over the place now. And he moves super fast! He pulls up to everything and usually gets in trouble with pulling my books off the shelf, playing in the dog food/water dish, or pushing buttons on the dvd player. Favorite things to do are to: pull up to a kitchen chair and shake it or jump while holding on, chase the dog around the house, or did I mention jump? haha

He weighed a little over 18lbs and is now 28" tall! Just this weekend he began letting go to stand on his own after he had pulled himself up. He also learned how to climb the front steps outside.

8 Months

Wow the changes that happen in a month! He has figured out how to sit up on his own, he took off crawling a week ago, and he is all over the house and pulling up to things. He said Da-Da over the wkd (not just randomly, but repeated it after me when I pointed at Jon) and started waving back to me today. I had a really fun photo shoot with him when he turned 8 months- thus the pictures above. He is in an old washtub from my Grandparent's farm with a few inches of water and before getting into the tub I got a few pictures of him in some 9m overalls from Great Grandma Nancy. They are a little baggy, but still cute. :) Anyway, as you can tell... he had a fun time.

7 Months

Ah, 7 Months old! He is really learning a lot these days...He gets on all 4s but just sways and stretches to reach an object of interest in front of him. I've even seen him use his toes to give him that extra inch when he's on his belly and trying to reach something. If I plop him on the floor or in his crib, he will sit up by himself for long stretches, but just hasn't quite figured out how to get into the sitting position on his own. He is using his voice a lot more these days and is getting louder and louder. :) You can't tell in the last picture, but he was wailing into the floor and carrying on about something. Maybe he was trying to tell me to put the camera down! haha

Zoo Trip 6-2010

So this post may be a little out of order... We went to the Zoo with our friends Bob, Stacy, & their son Logan in June. Aiden enjoyed the aquarium of bright and colorful fish. We watched the polar bears play in the water, saw the elephants up close, walked through the shark tunnel in the aquarium, and Aiden rode on the carosel for the first time. It was a fun way to spend a hot summer afternoon, though I'm sure Aiden would care more about seeing the animals in a year or two.

After spending several days in Arkansas with Jon's family, we traveled a few hours over to Oklahoma City to visit my side of the family. This was a planned trip, where as Aiden's & my trip in May was rather spur of the moment. There was a large family reunion going on the weekend while we were there and we were able to be a part of that and meet some family members we had never met. :) Jon and I left Aiden with my parents one evening and went out on a date. We went to Bricktown in downtown Oklahoma City and also went to the Oklahoma City Bombing Memorial. It was a very fun and enjoyable few days spent with family!

Aiden was able to meet all of his Great Grandparents on our trip this summer. On our way to Jon's parents and our way home from my parent's we stopped halfway at my Grandma's in Illinois. This was her first time to meet Aiden and she so enjoyed it! We were so glad it worked out to stop and visit. On our way through the first time, we ate breakfast with my Aunts & Uncles & cousins and had a really nice morning with them.

So a few days after my parents left our house, off we went on our real vacation of the year. We drove two days to Jon's hometown in Arkansas. We spent several days with his family and had a really good time.

Youth Camp 2010

Aiden & I caught I ride to Youth Camp with the Wayside Youth Group. We went down and stayed the week of church camp. My family was there and it was really fun to see everyone at camp who I've known for years. It was kind of different being back as a Mommy (I think I'm one of the only past campers in my age bracket that is married with a kid), but it was a really fun week. I spent the last night of camp helping pull camp security and watch for the mischevious few who tried to sneak out of their dorms for fun (they were rewarded with kitchen cleaning duty at 2AM and after we had the kitchen crew covered they were off to run themselves weary) It was a long night with very little sleep, but it wasn't too bad. I rode back home with my family after camp (minus a brother) who came back to our house for the weekend.

They hadn't held him since he was born and so he had grown quite a bit! It was a good visit and so good to see my family.

Aiden & Mommy flew to Omaha, Nebraska in May to visit close friend Kayla & her family. We spent two weeks there while Jon stayed home since he had a lot of overtime with his company opening a new location. Jess had a wonderful time catching up and having some good, quality girl and mommy time. I celebrated my first mother's day & 24th birthday while in Omaha. It was one of the best birthday presents ever. Thankful to my sweet husband for letting us go away for so long!

The Big Snow of 2010

So we just got almost two feet of snow in less than than 24 hrs! This is one of the biggest snowstorms our area has ever seen. It started yesterday afternoon and continued all night. This morning the sun was out and it looked absolutely beautiful! Due to all the snow, I didn't get out and get many pictures except for around the house. Samson went out with me and as you can see, he had a blast! :) They are calling for more snow this week... that should be interesting.

My little happy guy is 1 Month old as of Jan 29th. I am a little delayed in posting these pictures that I took of him that day. He is so fun as he grows and changes. He is smiling a lot more now. On Sunday, Jon's parents and grandparents arrived from Arkansas to see us. We had a good time visiting and staying close to home. Jon's dad has thyroid cancer and tired easily. His grandpa is recovering from cancer of the sinuses and his mother and grandmoter don't get around all that well. They seemed to really enjoy holding and helping out with Aiden though. My parents and brothers arrived late evening on Monday, Dec. 28. We celebrated our Christmas together and visited before we all headed to bed. I had been at the doctor earlier in the day and she stripped my membranes when she checked to see if I was dialated at all. I was still at 3cm and 75%, which is what I had been at for the previous two weeks. I started having hard contractions after I left the doctor. By the time my family arrived, the contractions were about 12-10 min apart. Everyone went to bed except for me. My contractions had increased to about every 6 min. I woke Jon to call the doctor and they told us to head to the hospital. We left for the hospital about 2:00a.m. The winter storm made an interesting and very LONG trip to Pittsburgh to the hospital. For the first half of the drive Jon couldn't even see the lines on the interstate!

We arrived at the hospital about 3:40a.m. I had recieved my iv antibiotics and epidural by about 4:30a.m. I have never experienced so much pain as the pain I had with my contractions. The epidural really helped a lot! They broke my water at 8:30 and I started pushing at 10:00a.m. Aiden was born 50min later. My family had come down to the hospital around 6 a.m. and so my Mom was able to be present with Jon for the delivery. Aiden cried for a minute after he came out but then had his eyes open and seemed content to just look around and gaze into the faces of his family.

Aiden Wayne Welch joined our family on Tuesday, December 29, 2009 at 10:50a.m. He weighed 7lbs, 1 oz., & was 20 inches long. So far Mom and baby are doing fine. They should be going home from the hospital tomorrow (New Years Eve). Stay tuned and we will update with the full story and more pictures very soon!

37 Weeks Pregnant

Jess is officially "full term" now. At 37 weeks, the baby's lungs are fully developed and he could safely arrive anytime now. Jess is having trouble with heartburn and getting comfortable, as well as some trouble sleeping at night, but over all she has been feeling great! Her doctors appointments are going well and they say baby Aiden is measuring normal for his due date on Jan. 1, 2010. They have told Jess to watch her weight these last few weeks, but she has only gained about 25lb so far during her pregnancy. Some people have told us that Jess may deliver earlier than New Years, and Jess certainly hopes so. But we will just have to wait and be surprised! :) Our families plan to visit after the baby is arrives. Jess' parents will probably be here first for a few days and Jon's parents will be coming up to visit at the end of January.

Monster Cookies

2 c. white sugar
1 lb. box brown sugar
6 eggs
1 T. karo white syrup
1/2 lb. margarine
1 1/4 tsp. vanilla
1 (18oz) jar crunchy peanut butter
1 1/4 tsp. baking soda
1 1/2 pkg. chocolate chips
9 c. quick oatmeal
1 lb. M&Ms

Mix all together and drop by teaspoonfulls and flatten. Bake at 300 for 10-15 minutes.
(*Test the first pan, cookies should be tender and chewy but should not fall apart on you when cooled. I have a gas stove and 15 min was perfect for my batch of cookies.)

Fruit Cups

This is a delicious and refreshing addition to breakfast or just to enjoy as a snack!!!

1 Can of Apricots - chopped
2 Bags (or 18 oz container) of Frozen Strawberries (no sugar added) - chopped
4 Large Bananas- diced
1 large can of Diced Pineapple
2 cups of Blueberries (optional)

Mix all above together in a large bowl. Rinse the Pineapple can & Apricot Can with water and add to fruit mixture for juice. Then, take small plastic cups (I use the tiny 5oz. cups) & fill with fruit. Make sure to get an even amount of juice and fruit in the cups. Stand in baking pan in freezer until frozen solid, then you can store in ziplock bags, stacked til ready to eat. Let them thaw slightly before eating, they are best when they are slushy and you still have frozen fruit pieces to enjoy.

I am beginning to think that Samson knows that something is about to happen in our house. He follows me everywhere (more than usual) and wants to snuggle with you whenever he can. I also think that he has been a little more protective of me since I became pregnant. The other night he just wouldn't stop trying to get on the couch with Jon and I. We have been trying to work with him on not getting on the furniture, as we're getting a new couch soon and need to break his habbit. I finally gave in and let him up beside me. He immediately ducked under the blanket I had across my lap and made himself comfortable, resting his head across my pregnant belly to watch TV with us. :) It didnt take long and he was sound asleep! Aiden started kicking and my belly was moving and bouncing Samson's head but he didnt seem to care. I just thought this snapshot was too cute not to post. It will be going into Aiden's baby book eventually... hopefully they are as good of buddies when Aiden is outside of my stomach as they seem to be right now. :)

On Sunday afternoon Megan Nash hosted a baby shower for me at her house. All invited were the ladies from the Doctor's office where I used to work. It was a fantastic afternoon spent with some dear and wonderful friends. They pitched in to get me the baby monitor & highchair we had registered for, plus loaded us up with outfits, tylenol infant drops, diapers, wipes, and towels. We even got a humidifier, some baby books, toys, & bibs! I am so blessed to have such great people in my life. A big Thank You to Megan for hosting the shower and to everyone else as well. It was so nice to see and visit with everyone again. I miss working with them!

False Alarm

Its hard to believe I am 32 weeks pregnant already! Where has the time gone? We have 8 weeks left until Aiden's due date for arrival, but only 5 weeks until the doctors consider him "full term".

We had a little bit of an interesting evening yesterday. I have been feeling a little cramping discomfort in my lower back for the past couple weeks and the doctors have been checking me weekly to make sure not starting to go into labor.

Well my symptoms were a bit worse yesterday so I called my OB Doctor. The nurse advised me to go to the hospital to get checked out. I left work, drove to Pittsburgh and picked Jon up after work and we drove over to the hosptial.We discovered that during "rush hour" headed into the city that even with that traffic, it only took us 1hr from the time I left the house til we arrived at the hospital. Not too bad.

Anyway, I went up to Labor & Delivery and they put me on monitors and did a test to see if I was in Preterm Labor. I did have a few small "peaks" on the monitors which I guess translated as a few small contractions, but nothing to worry about. It was interesting to watch the baby's hearbeat on the monitors. He stayed steadily in the 140-150 range but a couple times went up in the 180s to 190s then dropped to 120s. The cramping they said was normal but some of it was caused by baby's position: "Oh, yup his head is right there, thats probably causing a lot of your pressure" the doctor said as he felt around on my belly.

We arrived at the hospital about 5:40pm and left about 4 hours later. Anyway, very glad to know that everything is fine and we aren't having baby Aiden anytime soon! I feel much better after getting checked out. I will start going to the doctor every 2 weeks now. We were very impressed with the hospital after our false alarm last night and are very comfortable with the idea of delivering there in several weeks.

Tortilla Soup

2 cans of black beans (drained)

2 cans of diced Italian Style tomatoes

1 can of chicken broth

1 can of tomato sauce

1 small can of green chillis

1 small jar of salsa

1/2 cup of water

2 chicken breasts, cooked & shredded/chopped into small pieces.

Combine all but chicken & cook for at least 1hr. Then add cooked chicken and cook for another hour. Beans should be soft. It is also ok to eat if not cooked so long. Just make sure to bring everything to a boil and cook for 20 min, add chicken and cook additional 10 minutes.

*I have done this in the crockpot for 6-8 hrs on low (chicken and all) and it has turned out super delicious! I just added a bit more water/tomato juice. The longer it cooks, the more tender the chicken and the softer the beans.

Top with crumbled Tortilla chips, cheddar cheese, & sour cream. ENJOY!

So this summer we worked on quite a few things outside... the front porch was in terrible need of fresh paint. When we finished with the porch and had paint left over- I decided the red shed should match! :) We recently got thin plywood, painted it white, and put it up around the two outside railings on the porch. This will just be temporary during the winter to protect from the wind and snow.

For the sake of good communication, I thought I would utilize my Facebook & our Blog to update our family members on how we are doing with baby things.

Everyone keeps asking, so I am just creating a reference point for those of you who are curious.

We are pretty well set on baby clothes sizes newborn up to 3 months.
We have plenty of blankets as well.
We have been blessed with many other different items also, from crib & swing, to bathtub & boppy pillow, to hangers & breast pump with accessories. We are still in need of items we have on our registry at Target & Wal-Mart (items listed are just registered for type of product and sizes. doesnt matter what print or material just as long as no pink.)

The baby's room is pretty much done, I just have a few things left to hang on the walls. Its getting pretty exciting now that that is all done and I'm in my 3rd Trimester now! :) January 1st will be here before we know it!

My Surprise Visitor

So, on Saturday I had a surprise at my Baby Shower. My Mom flew in from Oklahoma City to be there! She got in on Thursday the 1st and stayed until this morning. A whole week! I was completely clueless, despite the few hints I recieved unknowingly (it all makes sense now though... haha). It was really fun to have her here to stay with us. I called off work on Monday and we went to the Outlets and around town. She was able to meet up with some friends of hers here while I worked Tuesday and Wednesday and I took her to the Pittsburgh airport this morning. Jon knew for a whole month she was coming into town and kept the secret safe! I miss her already and can't wait to see her again with the rest of the family when baby Aiden is born!

We put the crib up last weekend after clearing out what was our office to make room for baby. In this room will be the dresser, crib, bookcase, & then some wall hangings and decorations. I have curtains, picture frames, a rug, and baby quilt rack. After putting the crib together, I went ahead and unpacked the baby bedding we had gotten a few months back. It needs time to not look so boxed up and wrinkled. I'm really happy with how its turning out. We are still working in this room and getting things put away, so I will be sure to post more pictures very soon!

Baby Dresser

Finished project! There are new knobs on the drawers and door painted in the same green as the baby bedding we got. If you open the door the entire inside is painted in matching green. This is the perfect height for a changing table too. I am looking at matching green fabric to cover the changing pad to put on top! Can't wait to use it!

Its looking better already being sanded, coat of white paint, new drawer fronts & feet.

This dresser was made for my dad by my Great Papa Patterson when my dad was born. My brothers and I had it as our dresser as kids. When my parents moved, they left it behind. I didnt have a place for it- to take it at the time, so it sat for over a year in the basement of their old house. When we started working on the baby's room though, we needed a dresser. I was able to contact some people from the church who said they wouldn't mind if we stopped to see if the dresser was still there and if it was, to pick it up. Well obviously it was still there, and boy am I excited about this thing! It has a great story and even though it was looking a little sad when we brought it home, with a little hard work it has turned out great!

Stuffed Pepper Soup

4 to 5 Green Peppers (chopped)

1 Cup of White Rice

5 Beef Boullon Cubes

5 Cups of Water

3 Cans of Diced Italian Style Tomatoes

1 lb of Ground Meat, Cooked

1 Can of Tomato Soup

1 Cup of Ketchup

2 small Onions

Mix all of the above ingredients together.

Bring to a boil. Cook for at least 1 hour.

You want your peppers to be tender and the rice to be completely cooked.

I got this recipe from my friend Jenna last year.

This recipe makes a LOT so if you want a smaller amount its pretty easy to cut it in half.

I usually add a bit more water than the recipe asks for, but for a thicker consistency do the recomended amount. You can always add more water towards the end if you notice it starting to thicken too much for your liking after an hour. We always make half of this recipe and still have a bowl left over for lunches the next day.

Your house will smell delicious while this soup is cooking, enjoy!

Our Anatomy Ultrasound was on August 13th. Jon hadn't gone with me to an ultrasound since the very beginning. He was amazed at how much the baby had grown! We watched the baby suck his thumb and move all around. We definately saw boy parts too, so we were pretty excited about that. We just can't wait to meet our little baby boy. Aiden Wayne Welch will be here before we know it!

It was really sad to leave all my friends and coworkers at the doctor's office, but at the same time, it was definately something that I needed to do. I will still be in to visit them often, but I am enjoying working in a less-stressful environment these days!

Samson at 1 year! Samson at about 6 months...

Samson as a puppy...

I can't believe my dog used to be this tiny adorable little puppy! He has definately been a joy to have around the house. It is going on a year since we have had him living with us. Hard to believe!

Baby Welch - 14 weeks - July 8, '09

This is our baby at the follow up ultrasound at week 14. As you may see in this picture, the placenta has moved up like it is supposed to and is above the baby now. This is a great profile pic of the baby with it's legs bent. Looks comfy! :) Jess is feeling some better now that she is in her 2nd Trimester. Still craving anything with fruit, cereal, ice cream now, and pizza plus chinese now! She has had a few random cravings for hot dogs too, but still avoiding most meats. The stretching pains have resumed and so the trips to the bathroom in the middle of the night have begun! Jess is due to have an anatomy ultrasound done between 18 to 20 weeks. Her next OB appointment is Tues, July 21st. More updates and ultrasound pics to come!

Baby Welch - 11 weeks - June 17, '09

So here is a picture of our little one on the way! The baby has it's hand up by its face and looks to us like it is rubbing its eyes. This sonogram is from 11 weeks. As you may be able to see, the placenta is underneath the baby in this picture. The doctor will be monitoring the placenta to make sure it moves away from the cervix. Jess has been having food adversions to most meats, pastas and craving a lot of fruit and pizza! :)
